Ingredients

  • 8 pieces Corn tortillas
  • 1 bottle Cooking spray
  • 1 can (15 oz) Canned black beans
  • 1 cup Low-fat Greek yogurt
  • 1 tablespoon Lime juice
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 medium Avocado
  • 1 cup Cherry tomatoes
  • 0.5 medium Red onion, finely chopped
  • 0.25 cup Fresh cilantro, chopped
  • 1 small Jalapeño, finely chopped
  • 2 cups Shredded lettuce

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the corn tortillas on a baking sheet in a single layer. Lightly spray both sides of each tortilla with cooking spray.

Step 3

Bake in the preheated oven for 5 minutes, flip each tortilla, and bake for another 5 minutes until they are golden and crispy.

Step 4

While the tortillas are baking, drain and rinse the black beans. Transfer them to a bowl and mash them slightly with a fork or potato masher.

Step 5

In a separate small bowl, mix the low-fat Greek yogurt with lime juice, ground cumin, salt, and black pepper.

Step 6

Prepare the toppings: dice the avocado, halve the cherry tomatoes, finely chop the red onion and jalapeño, and chop the fresh cilantro.

Step 7

Once the tortillas are ready, spread a layer of mashed black beans over each tostada.

Step 8

Top with a dollop of the yogurt mixture, followed by avocado, cherry tomatoes, chopped red onion, cilantro, jalapeño, and shredded lettuce.

Step 9

Serve immediately while the tostadas are still crispy.
