Ingredients

  • 120 grams all-purpose flour
  • 50 grams unsweetened shredded coconut

  • 0.25 teaspoon salt
  • 60 grams softened low-fat margarine
  • 50 grams granulated sugar
  • 1 large egg white
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the flour, shredded coconut, baking powder, baking soda, and salt.

Step 3

In a separate large bowl, cream together the softened low-fat margarine and granulated sugar until light and fluffy, about 2 to 3 minutes.

Add the egg white and vanilla extract to the margarine mixture and beat until well combined.
