Ingredients

  • 1 small head Green cabbage
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 2 stalks Green onions
  • 0.5 cup Fresh cilantro
  • 3 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by preparing the vegetables. Remove the outer leaves of the cabbage, and cut it in half. Remove the core and finely shred the cabbage using a sharp knife or mandoline. Place the shredded cabbage in a large mixing bowl.

Step 2

Peel the carrots and cut off the ends. Use a julienne peeler or a grater to make thin strips of the carrots. Add them to the bowl with the cabbage.

Step 3

Core and thinly slice the red bell pepper. Add it to the mixing bowl.

Step 4

Slice the green onions finely, both the green and white parts, and add them to the bowl as well.

Step 5

Roughly chop the fresh cilantro and add it to the mixing bowl.

Step 6

In a small bowl, whisk together the lime juice, olive oil, and honey until well combined.

Step 7

Pour the dressing over the vegetables in the mixing bowl.

Step 8

Sprinkle the salt and black pepper over the salad and toss everything until the vegetables are evenly coated with the dressing.

Step 9

Taste and adjust the seasoning if necessary, adding more salt, lime juice, or honey as desired.

Step 10

Serve immediately for maximum freshness and crispiness, or cover and chill in the refrigerator for up to 2 hours before serving.
