Ingredients

  • 1 pound Lean ground beef (90% lean)
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Taco seasoning, low-sodium
  • 0.5 cup Water
  • 8 pieces Corn tortillas
  • 1 can Olive oil cooking spray
  • 2 cups Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.5 cup Reduced-fat shredded cheddar cheese
  • 0.5 cup Salsa
  • 0.25 cup Cilantro, chopped (optional)

Directions

Step 1

Heat a large non-stick skillet over medium-high heat.

Step 2

Add the lean ground beef and cook for 5-7 minutes, breaking it apart with a wooden spoon, until browned and fully cooked.

Step 3

Drain any excess fat from the skillet, if necessary.

Step 4

Add the chopped onion and minced garlic to the beef, and sauté for 3 minutes until the onion is translucent and the garlic is fragrant.

Step 5

Stir in the taco seasoning and water. Bring to a simmer, reduce the heat, and let it cook for another 4-5 minutes until the liquid is mostly absorbed.

Step 6

While the beef mixture is simmering, lightly spray both sides of each corn tortilla with olive oil cooking spray.

Step 7

Heat another non-stick skillet over medium heat and cook each tortilla for about 1-2 minutes on each side until lightly crispy and golden brown.

Step 8

To assemble the tacos, place a portion of the beef mixture onto each tortilla.

Step 9

Top with shredded lettuce, diced tomatoes, reduced-fat cheddar cheese, salsa, and cilantro if desired.

Step 10

Serve immediately and enjoy your low fat crispy beef tacos!
