Step 1

Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.

Wash and peel the beets to remove any dirt and outer skin. Use a mandoline slicer or a sharp knife to slice the beets into very thin rounds, about 1/16 inch thick.
