Ingredients

  • 1 cup Whole wheat flour
  • 1.5 cup Skim milk
  • 2 Large egg whites
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0 Cooking spray
  • 0.5 cup Granulated sugar
  • 0.25 cup Water
  • 0.25 cup Light cream
  • 0.5 teaspoon Vanilla extract (for sauce)
  • 1 pinch Salt (for sauce)

Directions

Step 1

In a medium-sized mixing bowl, whisk together the whole wheat flour, skim milk, egg whites, vanilla extract (1 teaspoon), and salt until the mixture is smooth and no lumps remain. Let the batter rest for 10 minutes.

Step 2

While the batter rests, prepare the caramel sauce. In a small saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar is dissolved.

Step 3

Once the sugar is dissolved, stop stirring and let the mixture come to a boil. Continue to cook until the mixture turns a golden-brown color, about 5 to 7 minutes. Watch closely to prevent burning.

Remove the saucepan from heat and slowly whisk in the light cream. Be careful, as the mixture will bubble vigorously.

Add the vanilla extract (for sauce) and a pinch of salt. Stir until well combined and set aside to cool slightly.
