Ingredients

  • 4 ounces low-fat cream cheese
  • 1 cup fat-free half-and-half
  • 1 cup reduced-fat sharp white cheddar cheese, shredded
  • 1 tablespoon cornstarch
  • 4 ounces canned diced green chilies, drained
  • 1 small jalapeño, seeded and finely chopped
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon cumin
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper

Directions

Step 1

In a medium saucepan, combine the cornstarch and half-and-half. Whisk together until combined and smooth to prevent clumping of cornstarch.

Step 2

Place the saucepan over medium heat and add the low-fat cream cheese. Stir continuously until the cream cheese has melted and the mixture is smooth.

Step 3

Gradually add the shredded reduced-fat sharp white cheddar cheese to the saucepan, stirring constantly until the cheese is fully melted and the sauce is smooth.

Step 4

Add the canned diced green chilies, finely chopped jalapeño, garlic powder, onion powder, cumin, salt, and pepper to the cheese mixture. Stir until all ingredients are well incorporated.

Step 5

Continue to cook the queso dip over medium heat, stirring frequently, until it reaches your desired thickness. This should take about 5 minutes.

Step 6

Taste the dip and adjust the seasoning with more salt and pepper if necessary.

Step 7

Once the dip is smooth, creamy, and hot, remove it from the heat. Serve immediately with tortilla chips or fresh vegetables for dipping.
