Ingredients

  • 1 cup Rolled oats
  • 2 cups Water
  • 1 cup Fresh raspberries
  • 0.5 cup Low-fat milk
  • 1 tablespoon Honey
  • 0.5 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan, bring 2 cups of water to a boil over medium-high heat.

Step 2

Stir in 1 cup of rolled oats and 0.25 teaspoon of salt. Reduce heat to medium, and cook for 5 minutes, stirring occasionally, until the oatmeal is thick and creamy.

Step 3

While the oats are cooking, mash half of the fresh raspberries in a small bowl using a fork. Set the remaining whole raspberries aside.

Step 4

After the oats have cooked for 5 minutes, stir in 0.5 cup of low-fat milk, 1 tablespoon of honey, and 0.5 teaspoon of vanilla extract. Continue to cook for an additional 2-3 minutes, stirring frequently, until the oatmeal reaches your desired consistency.

Step 5

Remove the saucepan from the heat and stir in the mashed raspberries.

Divide the oatmeal between two serving bowls, and top with the reserved whole raspberries.
