Ingredients

  • 450 grams radishes
  • 1 medium onion
  • 2 stalks celery stalks
  • 2 cloves garlic
  • 750 milliliters vegetable broth
  • 240 milliliters skim milk
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash the radishes thoroughly and trim the ends. Dice the radishes into small pieces.

Step 2

Peel and chop the onion. Slice the celery stalks thinly. Peel and mince the garlic cloves.

Step 3

In a large pot, heat 1 tablespoon of olive oil over medium heat.

Step 4

Add the chopped onion, celery, and garlic to the pot. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.

Stir in the diced radishes, vegetable broth, fresh thyme, salt, and black pepper. Bring the mixture to a boil.
