Ingredients

  • 8 oz whole wheat spaghetti
  • 2 medium (8-10 oz) lobster tails
  • 1 cup low-fat Greek yogurt
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes (optional)

Directions

Step 1

Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat. Add the whole wheat spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water and then drain the pasta.

Step 2

While the pasta cooks, prepare the lobster tails. Use kitchen scissors to cut down the back of the shell and gently pull the meat out, leaving it attached at the end. Cut the lobster meat into bite-sized pieces.

Step 3

In a large non-stick skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
