  • 0.5 cup Fresh parsley leaves, packed
  • 2 tablespoons Fresh tarragon leaves
  • 0.25 cup Fresh chives
  • 1 large Garlic clove
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon White wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 medium Avocado, ripe
  • 2 tablespoons Cold water

Directions

Step 1

In a blender or food processor, combine the low-fat Greek yogurt, parsley, tarragon, chives, and the garlic clove, peeled and roughly chopped.

Step 2

Add the fresh lemon juice, white wine vinegar, Dijon mustard, salt, and black pepper.

Step 3

Halve the ripe avocado, remove the pit, and scoop out half into the blender with the other ingredients.

Step 4

Blend on high speed until the mixture is smooth and creamy.

Step 5

Stop and scrape down the sides as needed to ensure even blending.

Step 6

If the dressing is too thick, add cold water, one tablespoon at a time, and blend again until you reach your desired consistency.

Step 7

Taste the dressing and adjust seasoning if necessary, adding more lemon juice or salt to taste.

Step 8

Transfer the dressing to a jar with a lid and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Step 9

Store in the refrigerator for up to 5 days. Stir well before using as separation may occur.
