Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 4 cloves Garlic, cloves peeled and minced
  • 1 cup Low-sodium vegetable broth
  • 0.5 cup Skim milk
  • 0.5 cup Fat-free Greek yogurt
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh chives (optional, for garnish)

Directions

Step 1

Place peeled and cubed potatoes into a large pot and cover with cold water by about an inch. Add a pinch of salt to the water.

Bring the pot to a boil over high heat, then reduce to a simmer. Cook the potatoes until they are fork-tender, approximately 15-20 minutes.
