Ingredients

  • 1 pound boneless, skinless chicken breast
  • 12 ounces whole wheat penne pasta
  • 1 tablespoon olive oil
  • 4 large garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 4 ounces low-fat cream cheese
  • 0.25 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest

Directions

Step 1

Cook the whole wheat penne pasta according to the package instructions in a large pot of boiling salted water until al dente. Drain and set aside.

Step 2

While the pasta is cooking, slice the chicken breast into bite-sized pieces.

In a large nonstick skillet, heat the olive oil over medium-high heat. Add the chicken pieces to the skillet and cook for 5-7 minutes, or until the chicken is browned on the outside and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for 1 minute, or until fragrant.
