Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup arborio rice
  • 4 cups low-sodium chicken broth
  • 1 cup low-fat milk
  • 0.5 cup parmesan cheese, grated
  • 0.25 cup fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Step 2

Cut the chicken breast into bite-sized pieces and season lightly with salt and pepper.

Step 3

Add the chicken pieces to the pan and cook until browned and cooked through, about 6-8 minutes. Remove from pan and set aside.

In the same pan, add the remaining tablespoon of olive oil and the chopped onion. Cook until the onion is translucent, about 5 minutes.
