Ingredients

  • 4 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Onion, chopped
  • 3 cloves Garlic cloves, minced
  • 1 cup Low-sodium chicken broth
  • 1 cup Greek yogurt
  • 2 tablespoons Lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the chicken breasts and cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook until translucent, about 4 minutes.
