Ingredients

  • 300 g Whole wheat penne pasta
  • 200 g Fat-free ricotta cheese
  • 150 ml Skim milk
  • 50 g Grated Parmesan cheese
  • 150 g Chopped fresh spinach
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 5 g Fresh basil leaves

Directions

Step 1

Bring a large pot of salted water (with 1 tsp salt) to a boil over high heat. Add the whole wheat penne pasta and cook according to the package instructions, or until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat 1 tbsp of olive oil in a large non-stick skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned.

Lower the heat to medium-low and add the chopped spinach to the skillet, cooking until wilted, which should take around 3-4 minutes.

Step 5

In a mixing bowl, combine the fat-free ricotta cheese and skim milk, stirring until smooth. Stir in the grated Parmesan cheese.

Once the spinach is wilted, add the ricotta mixture to the skillet and stir well to combine with the spinach and garlic.

Season the sauce with 0.5 tsp black pepper, then add the cooked penne pasta to the skillet.
