Ingredients

  • 3 medium (about 450g) Fresh beetroot
  • 150 grams Low-fat Greek yogurt
  • 2 tablespoons Lemon juice
  • 2 medium Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Olive oil
  • 1 tablespoon (chopped) Fresh dill
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 200°C (390°F).

Step 2

Wrap each beetroot in aluminum foil and place them on a baking sheet.

Step 3

Roast the beetroots in the preheated oven for about 45 minutes or until fork-tender.

Step 4

Once cooked, remove the beetroots from the oven and let them cool for 10-15 minutes.

Step 5

Peel the cooled beetroots and chop them into smaller chunks.

Step 6

In a food processor, combine the chopped beetroots, low-fat Greek yogurt, lemon juice, garlic cloves, ground cumin, olive oil, salt, and black pepper.

Step 7

Blend the mixture until smooth and creamy. You may need to stop and scrape down the sides of the food processor occasionally.

Once fully blended, taste the dip and adjust seasoning if necessary.

Transfer the beetroot dip to a serving bowl and garnish with chopped fresh dill.
