Ingredients

  • 1 large ripe avocado
  • 2 cups fresh baby spinach
  • 0.5 cup plain non-fat Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 large garlic clove
  • 0.25 cup fresh cilantro
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 0.5 small jalapeño, seeded and chopped
  • 1 large green onion, chopped

Directions

Step 1

Begin by washing the fresh baby spinach thoroughly under cold water and then pat dry using paper towels or a clean kitchen cloth.

Step 2

Cut the ripe avocado in half, remove the pit, and scoop out the flesh into a blender or food processor.

Step 3

Add the washed baby spinach to the blender along with the avocado.

Step 4

Add the plain non-fat Greek yogurt and fresh lime juice to the blender.

Step 5

Peel the garlic clove and add it to the blender. Also, add the fresh cilantro leaves, sea salt, and ground black pepper.

Step 6

Remove seeds from the jalapeño and chop it finely. Add half of the jalapeño to the blender for a mild heat kick; adjust the amount as desired for more heat.

Step 7

Chop the green onion and add it to the blender.

Step 8

Blend all the ingredients together until smooth and creamy, scraping down the sides as necessary to ensure even blending.

Step 9

Taste the dip and adjust the seasoning with additional salt, pepper, or lime juice as needed.

Step 10

Transfer the dip to a serving bowl. Cover and refrigerate for at least 30 minutes to allow the flavors to meld, if time permits.

Step 11

Serve chilled with fresh vegetable crudités, whole-grain crackers, or pita bread.
