Ingredients

  • 500 grams fresh spinach
  • 1 medium-sized onion
  • 2 cloves garlic clove
  • 750 ml low-sodium vegetable broth
  • 250 ml skim milk
  • 2 tablespoons cornstarch
  • 1 tablespoon olive oil
  • 1 pinch nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash the fresh spinach thoroughly under cold running water to remove any dirt and grit. Drain and set aside.

Step 2

Peel and finely chop the onion. Peel and mince the garlic cloves.

Step 3

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-5 minutes until the onion is soft and translucent.

Add the fresh spinach to the pot and cook for another 2-3 minutes, stirring occasionally, until the spinach is wilted.

Step 5

Pour in the low-sodium vegetable broth, and bring the mixture to a boil. Reduce the heat and let it simmer for about 5 minutes.

In a small bowl, mix the cornstarch with 2 tablespoons of the skim milk until smooth. Stir the cornstarch mixture into the pot, then add the rest of the skim milk.

Step 7

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth, returning it to the pot afterward.

Step 8

Add the pinch of nutmeg, salt, and black pepper to the soup, and stir well. Adjust seasoning to taste.

Continue to simmer the soup for another 3-5 minutes until it thickens slightly.
