Ingredients

  • 8 ounces low-fat cream cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 tablespoon milk
  • 0.125 teaspoon salt

Directions

Step 1

In a medium bowl, allow the low-fat cream cheese and unsalted butter to soften at room temperature for about 15 minutes if they were in the refrigerator.

Step 2

Using an electric mixer on medium speed, beat the soft cream cheese and butter together until smooth and creamy, about 2 minutes.

Step 3

Add the vanilla extract and a pinch of salt to the mixture, mixing until just combined.

Step 4

Gradually add the powdered sugar, about 1/2 cup at a time, beating on low speed to avoid a sugar cloud. Scrape down the sides of the bowl as needed.

Step 5

Once all the sugar is incorporated, check the consistency of the icing. If it is too thick, add 1 tablespoon of milk and beat until smooth. If a thinner consistency is desired, additional milk can be added 1 teaspoon at a time.

Step 6

Continue beating on medium speed for an additional 1-2 minutes until the icing is fluffy and smooth.

Step 7

Use immediately to frost cakes, cupcakes, or stored in the refrigerator covered for up to a week.
