Ingredients

  • 15 oz canned black beans
  • 1 cup frozen corn kernels
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 1 cup cherry tomatoes
  • 0.5 cup cilantro leaves
  • 1 large lime
  • 0.5 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Begin by draining and rinsing the canned black beans under cold running water. Set them aside to drain completely.

Step 2

In a small saucepan, bring water to a boil and add the frozen corn. Cook for 2-3 minutes until tender, then drain and rinse with cold water to stop the cooking process.

Step 3

Chop the red bell pepper into small, bite-sized pieces, and finely dice the red onion.

Step 4

Halve the cherry tomatoes and roughly chop the cilantro leaves.

Step 5

In a large mixing bowl, combine the drained black beans, cooked corn, bell pepper, red onion, cherry tomatoes, and cilantro.

Step 6

In a small bowl, squeeze the juice of the lime and stir in the ground cumin, salt, and black pepper.

Step 7

Pour the lime dressing over the salad ingredients and toss everything together until well combined.

Step 8

Taste the salad and adjust the seasoning with more salt or pepper if needed. Serve chilled or at room temperature.
