  • 4 pieces boneless, skinless chicken thighs
  • 2 cups dry red wine

  • 12 pieces pearl onions
  • 3 cloves garlic
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • 8 ounces mushrooms
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them with salt and black pepper.

Step 2

Heat a large non-stick skillet over medium-high heat and add olive oil.

Once the oil is hot, brown the chicken thighs on both sides, about 4-5 minutes per side. Remove the chicken and set aside.
