Ingredients

  • 400 grams cod fillets
  • 1 large potato
  • 1 large egg
  • 50 grams plain flour
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 1 as needed olive oil spray

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Peel the potato and cut it into large chunks. Boil the potato in a pot of salted water until it is tender, about 15 minutes. Drain and let it cool down slightly.

Step 3

While the potato is cooking, poach the cod fillets by placing them in a large pan and covering with enough water to submerge. Poach gently over medium heat for about 7-10 minutes, or until the fish is opaque and flakes easily. Drain and allow to cool slightly.
