Ingredients

  • 400 ml low-fat coconut milk
  • 200 ml skim milk
  • 50 grams granulated sugar
  • 30 grams cornstarch
  • 1 teaspoon vanilla extract
  • 30 grams shredded unsweetened coconut
  • 1 pinch salt

Directions

Step 1

In a medium saucepan, combine the low-fat coconut milk and skim milk. Stir well to blend the two kinds of milk.

Step 2

Over medium heat, gradually add the granulated sugar and a pinch of salt, stirring continuously until the sugar is completely dissolved.

Step 3

In a separate small bowl, mix the cornstarch with 3 tablespoons of water to make a smooth paste.

Step 4

Slowly whisk the cornstarch paste into the milk mixture on the stovetop.

Step 5

Continue to cook the mixture over medium heat, constantly stirring, until it begins to thicken. This should take about 5 to 7 minutes. Be patient and do not leave it unattended to prevent sticking or burning.

Step 6

Once thickened, reduce the heat to low, add in the vanilla extract and shredded unsweetened coconut, and stir for another 1 to 2 minutes.

Step 7

Remove the saucepan from the heat and transfer the pudding to individual serving bowls.

Step 8

Allow the pudding to cool at room temperature, then refrigerate for at least 2 hours or until set.

Step 9

Before serving, optionally garnish with a sprinkle of additional shredded coconut on top for extra texture and flavor.
