Ingredients

  • 2 cups Low-fat coconut milk
  • 1/3 cup Sugar
  • 2 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1/4 cup Unsweetened shredded coconut

Directions

Step 1

In a medium saucepan, combine 1 3/4 cups of the low-fat coconut milk and the sugar. Stir over medium heat until the sugar is completely dissolved, about 3 minutes.

Step 2

In a small bowl, whisk together the remaining 1/4 cup of coconut milk and the cornstarch until smooth. Gradually whisk this mixture into the saucepan.

Continue to cook the mixture, stirring constantly, until it thickens slightly and coats the back of a spoon, about 7 minutes. Do not bring to a boil.
