Ingredients

  • 800 ml Coconut milk, light
  • 200 ml Skimmed milk
  • 100 g Granulated sugar
  • 20 g Cornstarch
  • 1 tsp Vanilla extract
  • 0.25 tsp Salt
  • 2 tbsp Sweetened shredded coconut (optional for garnish)

Directions

Step 1

In a medium saucepan, combine 700 ml of light coconut milk and 200 ml of skimmed milk. Place the saucepan over medium heat and bring the mixture to a gentle simmer.

Step 2

While the milk mixture is heating, whisk together 100 grams of granulated sugar, 20 grams of cornstarch, and a pinch of salt in a separate bowl.

Step 3

Add the remaining 100 ml of light coconut milk to the sugar and cornstarch mixture and whisk until smooth to create a slurry.

Step 4

Once the milk mixture in the saucepan is simmering, reduce the heat to low. Gradually whisk in the slurry to the saucepan.

Continue to cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. This should take about 10 minutes.

Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract.
