Ingredients

  • 1 cup Almond flour
  • 1 cup Unsweetened shredded coconut
  • 2 tablespoons Coconut oil
  • 3 tablespoons Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 1 tablespoon Chia seeds
  • 0.25 teaspoon Salt
  • 0.25 cup Optional: Finely chopped almonds for coating

Directions

Step 1

In a large mixing bowl, combine almond flour, unsweetened shredded coconut, and chia seeds. Stir well to mix the dry ingredients.

Step 2

In a small microwave-safe bowl, melt the coconut oil by microwaving for 10-15 seconds if solid. Allow to cool slightly.

Step 3

Add honey (or maple syrup), vanilla extract, and almond extract to the melted coconut oil. Mix until fully combined.
