  • 100 grams Granulated sugar
  • 120 grams Unsweetened applesauce
  • 120 grams Low-fat yogurt
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Grated lemon zest
  • 60 milliliters Low-fat milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, combine the sugar, unsweetened applesauce, and low-fat yogurt. Whisk until the mixture is smooth and well combined.

Step 4

Beat in the eggs, one at a time, until fully incorporated.

Stir in the vanilla extract and grated lemon zest.

Step 6

Gradually fold the dry ingredients into the wet ingredients, alternating with the low-fat milk. Begin and end with the flour mixture. Mix until just combined, being careful not to overmix.

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Step 10

Once cool, slice, serve, and enjoy with a hot cup of tea.
