Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked brown rice
  • 1 medium, diced onion
  • 2 cloves, minced garlic
  • 1 14.5 oz can diced tomatoes
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup reduced-fat shredded mozzarella cheese
  • 1 tablespoon olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Rinse the bell peppers, slice off the tops to remove the stems, and remove the seeds and membranes. If needed, trim a small piece from the bottom so they stand upright.

Step 3

Bring a large pot of water to a boil and carefully add the bell peppers. Boil for about 5 minutes, then remove and drain them, setting them aside to cool slightly.

In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Add the ground turkey to the skillet and cook until it's browned and no longer pink, breaking it up with a spatula as it cooks.

Cover the baking dish with foil and bake in the preheated oven for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly on top.
