Ingredients

  • 300 grams lean beef sirloin
  • 2 tablespoons soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 cloves garlic
  • 1 teaspoon fresh ginger
  • 150 grams broccoli florets
  • 1 medium red bell pepper
  • 1 medium carrot
  • 2 stalks green onions
  • 1 cup low-sodium beef broth
  • 1 teaspoon sesame oil
  • 1 pinch black pepper

Directions

Step 1

Thinly slice the lean beef sirloin across the grain into strips approximately 1/4 inch thick. Place the beef slices in a bowl.

Step 2

In a small bowl, whisk together 1 tablespoon of soy sauce and cornstarch until smooth. Pour this mixture over the beef and mix to coat all the slices evenly. Allow the beef to marinate while you prepare the vegetables.

Step 3

Mince the garlic cloves and grate the fresh ginger. Set aside.

Step 4

Chop the broccoli into small florets. Slice the red bell pepper into thin strips, and peel and thinly slice the carrot. Cut the green onions into 1-inch pieces.

Step 5

Heat a large non-stick skillet or wok over medium-high heat. Add the vegetable oil, swirling to coat the surface.

Step 6

When the oil is hot, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

Step 7

Increase the heat to high, then add the marinated beef slices to the skillet. Stir-fry for 2-3 minutes until the beef is browned but not fully cooked through. Remove the beef from the skillet and set aside.

Step 8

In the same skillet, add the broccoli, bell pepper, and carrot. Stir-fry the vegetables for 3-4 minutes until they are just tender but still crisp.

Step 9

Return the beef to the skillet, add the remaining 1 tablespoon of soy sauce, low-sodium beef broth, and a pinch of black pepper. Stir everything together and cook for another 2-3 minutes, allowing the sauce to thicken slightly and the beef to cook through.

Step 10

Drizzle with sesame oil and add the green onions just before serving, tossing everything together one last time.

Step 11

Serve the stir-fried beef hot, optionally over a bed of steamed brown rice or quinoa for a complete meal.
