Ingredients

  • 400 grams spaghetti
  • 100 grams center-cut bacon
  • 2 garlic clove, minced
  • 60 grams reduced-fat Parmesan cheese, grated
  • 3 egg yolks
  • 1 whole egg
  • 60 grams low-fat Greek yogurt
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.

While the pasta cooks, heat a large skillet over medium heat. Add the bacon and cook until it becomes crispy, about 5-7 minutes. Remove bacon from the skillet and place it on a paper towel to drain the excess fat.
