Ingredients

  • 1 pound Lean ground beef (or ground turkey for even lower fat)
  • 1 tablespoon Olive oil
  • 1 Medium onion, finely chopped
  • 2 Garlic cloves, minced
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 cup Frozen peas
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Tomato paste
  • 1 cup Low sodium beef broth
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 pounds Potatoes, peeled and cubed
  • 0.5 cup Low-fat milk
  • 2 tablespoons Low-fat sour cream
  • 0.5 teaspoon Salt for mashed potatoes
  • 0.5 teaspoon Black pepper for mashed potatoes
  • 0.25 cup Grated Parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 5 minutes.

Step 3

Add the lean ground meat to the skillet. Cook until browned, breaking it up with a spoon, about 8 minutes.

Step 4

Mix in the diced carrots, celery, and peas. Stir well to combine the vegetables with the meat.

Step 5

Stir in the Worcestershire sauce, tomato paste, and beef broth. Season with thyme, salt, and black pepper. Simmer for about 10 minutes, allowing the flavors to meld together.

Step 6

While the meat mixture is simmering, prepare the mashed potatoes. Place the cubed potatoes in a pot of boiling water and cook until tender, about 15-20 minutes.

Step 7

Drain the cooked potatoes and return them to the pot. Add the low-fat milk, sour cream, salt, and black pepper. Mash until smooth and creamy.

Step 8

Spread the meat mixture evenly in a baking dish. Top with the mashed potatoes, smoothing them to cover the meat completely.

Step 9

Sprinkle the grated Parmesan cheese over the mashed potatoes.

Step 10

Place the dish in the preheated oven and bake for 20 minutes, or until the top is golden brown and the filling is bubbly.

Step 11

Remove from the oven, let cool slightly before serving, and enjoy your low-fat classic shepherd's pie!
