Ingredients

  • 4 large Yukon Gold potatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 cups Low-fat milk
  • 1 cup Chicken or vegetable broth
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Grated Parmesan cheese
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly spray a 9x13-inch baking dish with cooking spray and set aside.

Step 3

Peel and slice the Yukon Gold potatoes into 1/8-inch thick rounds. Set them aside in a bowl of cold water to prevent browning.

Thinly slice the onion and mince the garlic.

In a medium saucepan, combine the low-fat milk and chicken or vegetable broth. Warm the mixture over medium heat until it is just about to boil, stirring occasionally.
