Ingredients

  • 4 links low-fat sausages
  • 4 pieces whole wheat baps
  • 1 as needed cooking spray
  • 1 medium onion
  • 1 large tomato
  • 4 tablespoons low-fat mayonnaise
  • 1 cup fresh spinach leaves
  • 1 pinch salt
  • 1 pinch black pepper

Directions

Step 1

Preheat a non-stick skillet over medium heat and lightly coat with cooking spray.

Step 2

Cook the low-fat sausages in the skillet, turning occasionally, for about 12-15 minutes or until cooked through and nicely browned. Remove them from the heat and set aside.

Step 3

While the sausages are cooking, slice the onion thinly and the tomato into slices.

Step 4

In the same skillet, add the sliced onions with a small pinch of salt, and cook for about 5 minutes or until they are softened and starting to caramelize. Stir occasionally to avoid burning.

Step 5

Slice the whole wheat baps open and spread 1 tablespoon of low-fat mayonnaise on each side of the baps.

Step 6

Place a layer of fresh spinach leaves on the bottom half of each bap.

Step 7

Add the cooked sausage on top of the spinach layer, then top with the caramelized onions and sliced tomatoes.

Step 8

Finish with a pinch of black pepper over each bap and cover with the top half of the baps.

Step 9

Serve immediately and enjoy your low-fat classic sausage bap!
