Ingredients

  • 150 grams whole wheat pastry flour
  • 0.5 teaspoons salt
  • 3 tablespoons cold water
  • 2 tablespoons olive oil
  • 3 units large eggs
  • 2 units egg whites
  • 250 milliliters skim milk
  • 100 grams reduced-fat cheddar cheese, grated
  • 100 grams baby spinach, chopped
  • 100 grams cherry tomatoes, halved
  • 2 tablespoons basil leaves, chopped
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a medium bowl, combine whole wheat pastry flour and salt. Add olive oil and cold water. Mix until a dough forms.

Step 3

Roll out the dough on a lightly floured surface until it fits a 9-inch pie plate. Transfer the dough to the pie plate, pressing it into the bottom and sides.

Step 4

In a large bowl, whisk together the eggs, egg whites, and skim milk until well combined.

Step 5

Stir in the grated reduced-fat cheddar cheese, chopped baby spinach, halved cherry tomatoes, and chopped basil leaves into the egg mixture. Season with black pepper.

Step 6

Pour the egg mixture over the prepared crust in the pie plate evenly.

Step 7

Place the quiche in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is lightly golden.

Step 8

Remove from the oven and allow the quiche to cool slightly before slicing.

Step 9

Cut into slices and serve warm or at room temperature.
