Ingredients

  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 onion, chopped
  • 2 tomato, chopped
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 green chili, slitted (optional)

Directions

Step 1

Peel and dice the potatoes into small cubes and set aside in a bowl of water to prevent oxidation.

Step 2

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Step 3

Add the cumin seeds and mustard seeds to the hot oil and let them sizzle until they start to pop, about 30 seconds.

Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
