Ingredients

  • 3 pounds Lean beef chuck roast
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 medium Carrots, peeled and cut into chunks
  • 3 Celery stalks, cut into chunks
  • 2 cups Beef broth, reduced-sodium
  • 2 tablespoons Tomato paste
  • 1 teaspoon Thyme, dried
  • 2 Bay leaves
  • 3 medium Potatoes, peeled and quartered

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Season the beef chuck roast with salt and black pepper on all sides.

Step 3

In a large ovenproof pot or Dutch oven, heat the olive oil over medium-high heat. Sear the roast on all sides until browned, about 8-10 minutes total. Remove from pot and set aside.

Step 4

Reduce the heat to medium and add the chopped onion and garlic to the pot. Sauté for about 3-4 minutes until the onion becomes translucent.

Add the carrots and celery to the pot, cooking for another 5 minutes while stirring occasionally.

Stir in the beef broth, tomato paste, thyme, and bay leaves, mixing everything until well combined.

Return the beef roast to the pot, submerging it slightly in the broth mixture.

Scatter the potatoes around the roast in the pot.
