Ingredients

  • 180 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 100 grams Granulated sugar
  • 150 grams Unsweetened applesauce
  • 85 grams Low-fat plain yogurt
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 4 medium Fresh plums
  • 1 teaspoon Lemon zest
  • 1 tablespoon Confectioners' sugar

Directions

Step 1

Preheat your oven to 350°F (175°C). Line the bottom of an 8-inch round cake pan with parchment paper and lightly grease the sides.

Step 2

In a large bowl, sift together the flour, baking powder, ground cinnamon, and salt. Set aside.

Step 3

In a separate large mixing bowl, combine the granulated sugar, unsweetened applesauce, and low-fat plain yogurt. Whisk until well blended.

Beat in the eggs one at a time into the wet ingredients mixture, followed by the vanilla extract. Mix until smooth.
