Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 0.5 cup evaporated skim milk
  • 0.25 cup light corn syrup
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 2 cups pecan halves, roughly chopped

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicon baking mat. Set aside.

Step 2

In a large, heavy-bottomed saucepan, combine the granulated sugar, brown sugar, evaporated skim milk, light corn syrup, and unsalted butter.

Step 3

Place the saucepan over medium heat and stir constantly until the mixture begins to bubble.

Step 4

Continue to cook and stir the mixture until it reaches a temperature of 236°F (113°C) on a candy thermometer. This is known as the soft ball stage.

Step 5

Remove the saucepan from the heat and add in the vanilla extract and salt. Stir well to combine.

Step 6

Carefully fold in the pecan halves until they are evenly coated with the caramel mixture.

Step 7

Working quickly, use a tablespoon to drop rounded mounds of the praline mixture onto the prepared baking sheet.

Step 8

Allow the pralines to cool completely and harden at room temperature, which should take about 30 to 45 minutes.

Step 9

Once the pralines are set, they can be stored in an airtight container at room temperature for up to a week.
