Ingredients

  • 1 pound lean ground beef
  • 1 large onion, thinly sliced
  • 4 whole grain bread slices
  • 4 slices reduced-fat Swiss cheese
  • 2 tablespoons light mayonnaise
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 as needed cooking spray

Directions

Step 1

Divide the lean ground beef into 4 equal portions and form each into a patty, about 1/4 inch thick.

Step 2

Season the beef patties with salt and black pepper on both sides.

Step 3

Heat a skillet over medium heat and lightly coat with cooking spray.

Step 4

Add the sliced onion to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and softened. Remove onions and set aside.

Step 5

In the same skillet, cook the beef patties for 3-4 minutes on each side, until nicely browned and cooked through. Remove patties from skillet and set aside.

Lightly coat one side of each bread slice with light mayonnaise.

On a clean surface, lay two slices of bread mayonnaise-side down. Place a slice of reduced-fat Swiss cheese on each slice, followed by a beef patty, some cooked onions, another slice of Swiss cheese, and top with the remaining bread slices, mayonnaise-side up.

Wipe the skillet clean and reapply cooking spray. Heat over medium heat.

Place the assembled sandwiches in the skillet and cook for 2-3 minutes on each side, pressing down gently with a spatula, until the bread is toasted golden brown and the cheese has melted.
