In a large bowl, combine the bread flour, instant yeast, and salt. Stir them together until evenly mixed.
In a measuring cup, dissolve the honey in the warm water. Gradually add the water/honey mixture into the flour mixture, stirring with a wooden spoon or your hands until a rough dough forms.
Transfer the dough onto a lightly floured surface and knead it for about 10 minutes until it becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Once the dough has risen, punch it down to release any air bubbles. Divide the dough into 8 equal pieces. Shape each piece into a ball.
To shape the bagels, poke a hole through the center of each ball with your finger and gently stretch and compress the dough to form a ring, stretching the hole to about 1-2 inches in diameter.
Place the shaped bagels on a baking sheet lined with parchment paper. Cover them with a damp cloth and let them rest for 10 minutes.
Preheat your oven to 220°C (425°F). In the meantime, bring a large pot containing 2000 milliliters of water to a boil. Add the baking soda to the boiling water.
Carefully place a few bagels at a time into the boiling water. Boil each side for 1 minute, then remove them with a slotted spoon and place back onto the baking sheet.
Brush the tops of the boiled bagels with egg white for a glossy finish.
Bake them in the preheated oven for 20-25 minutes, or until they turn golden brown.
Remove the bagels from the oven and let them cool on a wire rack before serving.
