  • 480 grams Bread Flour
  • 10 grams Instant Yeast
  • 30 grams Honey
  • 10 grams Salt
  • 270 milliliters Warm Water
  • 1 large Egg White
  • 2000 milliliters Boiling Water
  • 15 grams Baking Soda

Directions

Step 1

In a large bowl, combine the bread flour, instant yeast, and salt. Stir them together until evenly mixed.

Step 2

In a measuring cup, dissolve the honey in the warm water. Gradually add the water/honey mixture into the flour mixture, stirring with a wooden spoon or your hands until a rough dough forms.

Step 3

Transfer the dough onto a lightly floured surface and knead it for about 10 minutes until it becomes smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Once the dough has risen, punch it down to release any air bubbles. Divide the dough into 8 equal pieces. Shape each piece into a ball.

To shape the bagels, poke a hole through the center of each ball with your finger and gently stretch and compress the dough to form a ring, stretching the hole to about 1-2 inches in diameter.

Brush the tops of the boiled bagels with egg white for a glossy finish.

Remove the bagels from the oven and let them cool on a wire rack before serving.
