Ingredients

  • 1 cup All-purpose flour
  • 0.25 cup Granulated sugar
  • 0.25 cup Unsalted butter, chilled and cut into small cubes
  • 0.25 cup Greek yogurt, non-fat
  • 3 large Egg whites
  • 0.5 cup Lemon juice, freshly squeezed
  • 1 tablespoon Lemon zest
  • 2 tablespoons Granulated sugar
  • 2 tablespoons All-purpose flour
  • 0.25 teaspoon Baking powder
  • 0.125 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Powdered sugar for dusting (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, allowing two sides to overlap for easy removal.

Step 2

In a medium bowl, combine 1 cup flour and 1/4 cup sugar. Add the chilled butter cubes and use a fork or pastry cutter to blend until the mixture resembles coarse crumbs.

Stir in the non-fat Greek yogurt until dough begins to form. Press the dough evenly into the bottom of the lined pan.

Bake the crust for 12 to 15 minutes or until lightly golden. Remove from oven and let cool slightly.
