Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 cup granulated sugar
  • 0.5 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 0.5 cup low-fat milk
  • 0.25 cup unsweetened cocoa powder
  • 1 cup icing sugar
  • 0.5 cup boiling water
  • 1.5 cups desiccated coconut

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease and line an 8x8 inch (20x20 cm) baking pan with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, mix the granulated sugar, applesauce, and vanilla extract until well combined.

Step 4

Add the egg whites to the sugar mixture one at a time, mixing well after each addition.

Step 5

Alternate between adding the flour mixture and milk to the sugar mixture, starting and ending with the flour mixture. Mix until just combined.

Step 6

Pour the batter into the prepared baking pan, smoothing the top with a spatula.

Step 7

Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 8

In a bowl, sift together the cocoa powder and icing sugar. Gradually add the boiling water, whisking until smooth to create the chocolate coating. It should be a thin, pourable consistency.

Step 9

Once the cake has cooled, cut it into 12 squares.

Step 10

Dip each square into the chocolate coating, ensuring that each side is covered. Let any excess coating drip off, then roll the lamington in the desiccated coconut.

Step 11

Place the coated lamingtons on a wire rack to set. You might want to place a baking sheet underneath to catch any drips.

Step 12

Once the lamingtons have set, serve them fresh. They can also be stored in an airtight container for up to 3 days.
