In a large bowl, mix together the whole wheat flour, semolina (if using), and salt.
Add 1 tablespoon of oil to the dry ingredients and mix until the oil is evenly incorporated, giving the flour a crumbly texture.
Gradually add water, a little at a time, and knead into a firm yet smooth dough. The amount of water needed may vary slightly based on the flour.
