Ingredients

  • 4 cups fat-free milk
  • 4 egg yolks
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 1 cup pasteurized egg whites

Directions

Step 1

In a medium saucepan, combine the fat-free milk and salt, and heat over medium-low heat until the mixture is steaming, but not boiling.

Step 2

In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and slightly thickened.

Step 3

Gradually add the hot milk mixture into the egg yolk mixture, a little at a time, whisking constantly to prevent the eggs from scrambling.

Step 4

Pour the combined mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes. Do not let it boil.

Step 5

Remove from heat and stir in the vanilla extract, ground nutmeg, and ground cinnamon.

Pour the mixture into a large mixing bowl and allow it to cool slightly.
