Ingredients

  • 500 grams lean ground beef (95% lean)
  • 2 large egg whites
  • 80 grams whole wheat breadcrumbs
  • 60 milliliters low-fat milk
  • 30 grams grated Parmesan cheese
  • 1 medium finely chopped onion
  • 2 cloves minced garlic
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 as needed olive oil spray

Directions

Step 1

Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper. Lightly spray with olive oil.

Step 2

In a small bowl, soak whole wheat breadcrumbs in low-fat milk for about 5 minutes until they become soggy.

Step 3

In a large bowl, combine the soaked breadcrumbs, lean ground beef, egg whites, grated Parmesan cheese, chopped onion, minced garlic, chopped fresh parsley, dried oregano, salt, and black pepper.

Step 4

Mix the ingredients together using your hands or a spatula until well combined; do not overmix as it may result in tough meatballs.

Step 5

Shape the mixture into small balls, roughly the size of a golf ball, and place them evenly spaced on the prepared baking sheet.

Step 6

Lightly spray the tops of the meatballs with olive oil spray to help them brown evenly.

Step 7

Bake in the preheated oven for 18-20 minutes or until the meatballs are cooked through and lightly browned on the outside.

Step 8

Remove from the oven and let meatballs rest for a few minutes before serving with your choice of sauce or pasta.
