  • 0.25 teaspoon Black pepper
  • 1 cup Canned black beans, rinsed and drained
  • 1 cup Cherry tomatoes, quartered
  • 0.25 cup Fresh cilantro, chopped
  • 4 large Whole wheat tortillas
  • 2 cups Shredded lettuce
  • 0.5 cup Low-fat shredded cheese
  • 0.5 cup Salsa

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

Add the diced red bell pepper to the skillet and cook for an additional 3 minutes, stirring occasionally.
