Ingredients

  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 150 grams Low-fat plain yogurt
  • 3 tablespoons Honey
  • 2 large Egg white
  • 1 teaspoon Vanilla extract
  • 80 grams Dried apricots, chopped
  • 80 grams Raisins
  • 80 grams Dried cranberries
  • 1 tablespoon Orange zest
  • 60 ml Water

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a 900g loaf tin with parchment paper.

Step 2

In a large bowl, sift together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

In another bowl, whisk together the low-fat plain yogurt, honey, egg whites, and vanilla extract until well combined.

Step 4

Gradually fold the wet ingredients into the dry ingredients, mixing gently until just combined. Do not overmix.

Step 5

Add the chopped dried apricots, raisins, dried cranberries, and orange zest to the mixture, along with the water. Stir until the fruit is evenly distributed throughout the batter.

Pour the batter into the prepared loaf tin, smoothing the top with a spatula.
