Ingredients

  • 250 grams All-purpose flour
  • 50 grams Whole wheat flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 150 grams Dried mixed fruits
  • 80 grams Honey
  • 120 grams Unsweetened applesauce
  • 120 milliliters Low-fat milk
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch (23x13 cm) loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, ground cinnamon, and salt. Whisk them together until evenly distributed.

Step 3

Add the dried mixed fruits to the flour mixture, ensuring the fruits are well-coated to prevent them from sinking during baking.

Step 4

In a separate medium bowl, whisk together the honey, unsweetened applesauce, low-fat milk, egg, vanilla extract, and lemon zest until smooth and well combined.

Step 5

Create a well in the center of the dry ingredients and pour the wet mixture into the well.

Step 6

Gently fold the wet ingredients into the dry ingredients using a spatula until just combined. Be careful not to overmix, as this can result in a dense bread.

Step 7

Transfer the batter into the prepared loaf pan, smoothing out the top with the spatula.

Step 8

Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 9

Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once cooled, slice the fruit bread and serve it on its own or with a spread of your choice.
