Ingredients

  • 4 slices Low-fat bologna
  • 4 slices Whole wheat sandwich bread
  • 2 tablespoons Low-fat mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 Lettuce leaves
  • 1 medium, sliced Tomato
  • 1 Non-stick cooking spray
  • 4 Pickle slices
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Begin by preparing the mayonnaise spread. In a small bowl, mix together the low-fat mayonnaise and Dijon mustard. Set aside.

Step 2

Preheat a non-stick skillet over medium heat and lightly spray with non-stick cooking spray.

Step 3

Once the skillet is hot, add the low-fat bologna slices. Cook for about 2 minutes on each side, or until they are browned and slightly crispy around the edges. You may need to do this in batches if your skillet is small. Remove from heat and set aside.

Step 4

Lightly toast the whole wheat bread slices in a toaster or under a broiler until just golden and crisp.

Step 5

Spread the prepared mayonnaise and mustard mixture evenly on one side of each slice of toasted bread.

Step 6

On two of the mayonnaise-coated bread slices, layer a lettuce leaf, followed by 2 slices of fried low-fat bologna, tomato slices, and pickle slices.

Step 7

Season the tomato slices with a light sprinkle of salt and black pepper.

Step 8

Top each sandwich with the remaining bread slice, mayonnaise side down.

Step 9

Cut each sandwich in half, if desired, and serve immediately.
